There are a number of different versions as to how the hoagie got its name, but no matter what version you believe, all agree on one thing...it started in Philadelphia. The most widely accepted story centers on an area of Philadelphia known as Hog Island, which was home to a shipyard during World War I. The Italian immigrants working there would bring giant sandwiches made with cold cuts, spices, oil, lettuce, tomatoes, onions and peppers for their lunches. These workers were nicknamed "Hoggies". Over the years, the name was attached to the sandwich as well, but under a different spelling.

Beyond Bread opened its doors at 3055 North Campbell Avenue on February 2, 1998. The story began a few years earlier in Madison, Wisconsin. It was at this time that Shelby and Randie Collier began discussing where Shelby was going to take his experience in the restaurant business. A life as owner of a quiet little bakery where Shelby would rise early, bake beautiful loaves of fresh artisan bread and be home by mid-afternoon sounded terrific. So, leaving his bachelor's degree in Psychology behind him, Shelby began his training at Madison Sourdough Bread Company, learning from Master Baker, Cameron Ramsey. Eighteen months later, Shelby and Randie moved from Madison to Tucson, Arizona.Beyond Bread opened quietly but business started booming rapidly. Doubling as sandwich makers, slicers, and even the cleaning crew, the bakers had trouble finding time to bake the bread. Servicing the customers in the beginning required only 10 employees, however, the staff now numbers over 160. Offering sandwiches was almost an afterthought in the original business plan, while the generous portions and variety of offerings resulted in a whopping success.

Located in Trail Dust Town, the "Museum of the Horse Soldier" possesses one of the finest private collections of original United States Cavalry artifacts, equipment and memorabilia to be found anywhere. The Museum of the Horse Soldier is especially proud of its' superlative collection of U.S. military saddles and tack displaying most every variation from Pre-Civil War through the end of the Horse Cavalry in 1942.
